Boise Chef turns bus into mobile sushi restaurant

A local Boise chef is taking meals on wheels to another level. He converted a bus into a mobile sushi restaurant.

After working in the culinary industry around Treasure Valley for 15 years, Chef Gee decided to do something different— a sushi restaurant inside of a bus called G's.

“I’m from New Zealand, I’ve seen this around, but they’re not moving they’re not mobile," said Gee Crichton, owner and chef. "There's also something about sushi, I have made a lot of friends..I wanted to keep that feel and have my friends sit in front of me, it’s not something I could’ve done with a food truck.”

Gee decided not to go the traditional brick and mortar route because he wanted more flexibility in his schedule and location.

G's serves not only sushi, but also other foods like teriyaki bowls and salads. There is a fully stocked kitchen as well as eight dining tables inside the bus.

However, due to the pandemic, Gee has thought of different ways to experiment with his mobile restaurant.

So far, it's proven to be successful.

“Because of the pandemic, I built a step so I can serve out of a window," said Crichton. "So if people don’t want to come in, they can pick it up and go.”
